Add in the white wine and cook until "au sec" , meaning you are going to dry the mixture right up. You don't want any excess moisture at this point. This step took the longest for me, mushrooms have so much liquid in them and you have to reduce that as well as the wine. Add in one cup of chicken stock and simmer until the liquid is absorbed.

Repeat with the remaining two cups of stock, one at a time. When cooking it is best to stir in a figure eight pattern, which some find hard to consistently keep up. I made it for dinner last night and at first my husband was a little suspicious of all the butternut squash. He felt the ratio of squash to rice looked completely out of balance. Just too much butternut squash for him he said. Once he started to eat it though, he changed his mind and really liked it. It was soo good and creamy. Plus how nice not having to stand there and constantly stir the risotto. It was very convenient to just bake it in the oven.

I will definitely make this soon again. Lucky for me there was a little bit left over even though my son had two large servings so I will get to enjoy it for lunch today as well. This recipe was wonderful! Thank you for sharing all these vegetarian recipes. Hi Carolyn!
